Sushi Dressing
1/2 c. Rice Vinegar
5 1/2 T. sugar
1 1/2 T. salt
1 inch piece of kelp
mix and heat to dissolve sugar
quick chill
ready to use.
Steam 3 c. Japanese rice
mix with 1/3 c. Sushi Dressing
fan rice while mixing
Assembly
place one large sheet of dried seaweed on bamboo roller
spread seasoned rice
place one or more of the following ingredients:
cooked seasoned shitake mushrooms
blanched carrots and string beans
omelette prepared with dashi stock
gourd ribbon cooked in seasoned stock
shrimp
cucumber
roll up, slice, and enjoy!
